Learning outcomes

The student is familiar with functional foods currently sold on the European market, and understands the scientific evidence and evaluation process behind the approved health claims. The student can evaluate the evidence and possible potential behind bioactive ingredients of foods and nutraceuticals in which official health claims cannot currently be made, and is familiar with the application procedure.

The health claims of food and the application process. The concepts of functional foods and raw materials, nutraceuticals, and bioactive ingredients. Technological challenges of functional food development.
