Learning outcomes

-Student knows the law and evaluation process related to nutritional and health claims.
-Student understands the principles of the preclinical and clinical trials on health effects of food.
-Student knows how to apply the information to food development challenges.

Contents

The health claims of food and novel food, and the related law. The strengths of functional foods and the functional raw materials. The technological challenges of development, and the experimental and clinical trials.
