Learning outcomes

Student understands what kind of pathogenic or profitable microbes may be present in different kinds of foods, and how their growth may be modified by changing the composition of the food or by food processing techniques.

Contents

The emphasis of the course may differ from year to year. Properties of food that promote or hinder the growth of microbiota, and alteration of these properties. Typical pathogenic and profitable microbes.
