Learning outcomes

Introduction of the whole process of food product development from generation and screening of new product ideas to test marketing of new products and an overview on different phases of food development process and the tasks and focuses of each phase.

Contents

The course will go through each of the phases including market research and generation of new product ideas, screening of product ideas, development of prototypes of new products and further screening of product ideas, technical development, development at pilot scale, test production, test market. The main features and focuses of each phase are highlighted. The practical group work of development of food products provides first hand understanding of the food development process as a continuous evaluation and screening process involving expertise of multiple disciplines.
