Learning outcomes

The course provides a comprehensive view and understanding of metabolism and potential toxicological effects of various toxicants as inherent components of foods, food additives or contaminants introduced at various stages of food production and packaging.

Contents

The course consists of three parts. Part I presents an introduction to the basic toxicokinetics and toxicodynamics of toxicants as well as methods for evaluating toxicity. Part II covers various toxicants in foods including both the inherent toxicants in foods of plant and animal origins. Food allergy and allergens are covered as well. Part III deals with food additives and food contaminants introduced during the agricultural practice and during food processing and packaging.
