Learning outcomes

As an advanced course in Food Development, the course focuses on various challenges and opportunities in food development brought by the changing trend in consumer needs and in the lifestyle of modern society and the fast increase in global trade. The course especially aims to provide training and skills for research and development work in food industry.


Specific research projects are used to demonstrate challenges and opportunities in food development. Key issues include development of new food product concepts, selection of raw materials, and effect of processing technologies on composition and quality of food product.
