Learning outcomes

The student knows the history and current state of polyphenol chemistry and understands how various developments in chemical techniques have enabled simultaneous developments of qualitative and quantitative polyphenol chemistry. At the same time, the student is aware of that the modern state-of-the-art methods do not automatically need to replace the more traditional ones.

Contents

During last decades, there has been an increasing interest in the study of plant polyphenols and their roles in a variety of different contexts. This has led to a rapid development of chemical methods in qualitative and quantitative polyphenol analysis, which in turn has resulted in the more traditional methods being overlooked or even abandoned. This course shows by case-by-case examples how polyphenol chemistry has evolved over time since the 1960s and 1970s. The course offers a package of the scientific papers of polyphenol chemistry that shows the development of selected topics over the decades. The most recent papers on these topics will also be searched. Each topic will be gone through in workshops that require active participation from the students. Each topic and workshop will be ended by discussions about new findings, future perspectives and opportunities.
