Learning outcomes

After this course the student knows in detail what kinds of polyphenolic structures plant cell is able to produce and in which order. Student understands the meaning of bigger entities in the qualitative and quantitative analysis of polyphenols: he has gained knowledge of how traditional and modern methods may be used to unravel the polyphenol composition of an unknown mixture of compounds. The student also knows how various methods are able to give additional information of polyphenol structure and activity.

General description

The course deals with several polyphenol groups (main emphasis on ellagitannins, proanthocyanidins and flavonoids), and on their chemical structures, biosynthetic pathways, distribution and significance in plants, and especially qualitative and quantitative analysis methods (UPLC, UV, MS, hydrolysis, gel chromatography, biochemical methods and so-called total methods). Main emphasis is on characterization of polyphenols by LC-DAD-MS and on polyphenol bioactivity and factors affecting it.
